St Patricks Day Lucky Squares

These delicious gooey crispy squares are perfect to make with children ready for your St Patricks day celebrations!


  • 45g butter or margarine
  • 300g marshmallows
  • 2oog mini marshmallows
  • 180g Rice Krispies or store own brand versions
  • 250g bar of white chocolate
  • Green food colouring or gel
  • Sprinkles
  • Lucky Charms!


  • Line a 13 x 9 (2 inch deep) with tin foil and lightly coat with cooking spray or oil
  • Melt the butter over a low heat in a large saucepan
  • Add the larger marshmallows and stir until completely melted
  • Remove from the heat
  • Add the Rice Krispies and stir with a wooden spoon until well coated, add in the mini marshmallows and a few coloured sprinkles
  • Place the mixture into the pre-prepared tin and compress down using the back of a spoon
  • Leave to cool completely (a quicker process if you have room in the fridge!)
  • When cool, cut into 2-inch squares
  • Melt the white chocolate, either in a microwave or bain-marie over a medium heat
  • Add a few drops of green food colouring to the chocolate and mix well
  • Dip each square into the chocolate on one side, then add sprinkles and lucky charms
  • Leave to cool and for the chocolate to set
